Research points to mix of factors contributing to obesity epidemic

Blame the modern American diet, say “alternative hypothesis” proponents: highly processed, rich in additives, preservatives and other synthetic chemicals, some of them toxic. It’s a recipe for disaster, they assert, fundamentally altering human metabolism in ways not yet detected or fully understood, in ways known or at least presumed to be bad for our health.
